Duties

  • Manages a Food Service Program within a business activity. Develops, recommends and enforces operating procedures. Plans and manages all phases of food service program where dining and catering are a substantial basis of the food operation.
  • Prepares/supervises the preparation of menus involving both standard and new cooking methods. Represents the activity to the public.
  • Conducts customer surveys, reviews usage/sales to make recommendations concerning services, promotion activities and revenue improvements. Develops operating budget and data, identifying labor, equipment, and supply costs.
  • Participates in the selection of employees, directs on-the-job-training of new employees, makes duty assignments consistent with operational requirements.
  • Controls food pricing and costs. Oversees food ordering, storage and issues. Directs subordinates in all phases of food preparation and food sanitation requirements. Supervises assigned staff. Performs other duties assigned.
